Chef Mahendra grew up watching his grandmother slow-cook panchmel dal over a wood fire in Jodhpur, learning that Rajasthani food is as much about patience and pride as it is about spice.
After training in the palace kitchens of Udaipur and running a boutique catering service for Marwari weddings, he moved to Patna in 2010 with a single ambition — to give the city a Rajasthani table it would keep coming back to.
Today at Ghoomar, every thali he sends out is a small tribute to Dadi ji: hand-served, in ghee, and with the same fierce insistence that you eat one more baati.
